Grilled Oysters with Garlic Compound Butter

Overnight prep, 10 mins cook time

Oysters on the half shell with a garlic compound butter melting on top of them while they sit on the grates of an open grill

Ingredients

  • 12 oysters shucked
  • 4 Tbsp softened butter
  • 2 garlic cloves, minced
  • 1 Tbsp chopped parsley
  • 1 Tbsp chopped chives
  • 1 tsp lemon juice
  • ½ tsp kosher salt
  • ½ tsp fresh ground pepper

Directions

  • In a small bowl, mix butter, garlic, herbs, lemon, salt & pepper.
  • Wrap butter mixture in plastic wrap, roll into a log, and refrigerate overnight to let flavors meld.
  • Slice off 1 tsp of butter per oyster, and place on top of shucked oyster.
  • Grill oysters over medium-high heat with lid closed for 3-5 minutes until the juices bubble. 

    Note: The oysters will be very hot coming off of the grill. Exercise caution.
  • Let oysters rest for 1-2 minutes after grilling until they are a suitable temperature for eating.
